If you love chocolate chip cookies, you going to go crazy for this keto cookie recipe! These keto chocolate chip cookies are spiced up with a little cinnamon and dressed up with coconut and pecans to create an easy keto cookie that is completely freakin’ delish! Crisp on the outside and chewy in the middle, these cowboy cookies are my absolute favorite keto cookie…but don’t take my word for it!!
This keto cookie recipe and I have a love/hate relationship. They’re completely and utterly, everything I want in a cookie but keto friendly which is amazing! But, I’m a cookie junky and they’re so addictive…I can never eat just one!! For this reason, I reserve these keto cookies for special weekends or times of year like the holidays…or when I need a treat after a crazy busy week!
We’re almost into the official baking season, so I wanted to share this easy keto cookie recipe. Honestly, great cookie texture is hard to to come by in a keto cookie so this recipe has been a work in progress for sometime!
What is a Cowboy Cookie?
Well, I’m glad you asked! The Cowboy cookie is a take on the Ranger cookie and is basically a chocolate chip cookie that’s loaded up with oatmeal, coconut and pecans…yum right? In this Cowboy Keto Cookie recipe, the coconut really plays double duty, giving the feel of oatmeal and the flavor and moisture of coconut!
Making these easy keto cookies
These cookies could not be easier to make! As any great cookie recipe, this keto cookie recipe starts with butter. The butter gets creamed with a little almond butter and the sweetener. The almond butter lends great texture and help add a chewiness to these cookies. After that a mixture of almond and coconut flour along with powdered gelatin are added. The gelatin also helps add some chew to this keto cookie recipe.
Then all the goodies go into the bowl, unsweetened desiccated coconut, chopped pecans, sugar free chocolate chips and cinnamon! The addition of cinnamon compliments all the flavors perfectly and adds great warmth and flavor to the cookie. As you know, I’m a huge fan of Fiesta Brand Spices, but did you know they also have cinnamon? Yep!
The dough is scooped out onto a sheet pan, slightly pressed down and baked for a few minutes. The cookies will not spread much so you can fit 12 on a 11×17 sheet pan. Let the cookies cool on the pan and enjoy!
Around here, these cookies don’t last long but once cooled, store them in a covered container on the counter.
Paige has declared this the best keto cookie recipe so far and I have to say I agree completely. Full of flavor and texture from all those yummy additions, slightly crisp on the outside with a chewiness on the inside, this keto chocolate chip cookie recipe is a winner! About 1.2 net carbs per cookie!

Ingredients
- 1/2 cup butter softened
- 4 Tbsp. creamy almond butter
- 1/3 cup Lakanto Golden Monkfruit Blend
- 1 egg
- 1 tsp. vanilla
- 1/2 tsp. cinnamon
- 1 1/4 cup almond flour
- 1 Tbsp. coconut flour
- 1/4 tsp. salt
- 3/4 tsp. baking soda
- 1 Tbsp. unflavored gelatin
- 1/2 cup sugar free chocolate chips
- 1/3 cup unsweetened desiccated coconut
- 1/3 cup finely chopped pecans
Instructions
Preheat oven to 375 degrees.
In the bowl of a stand mixer, cream together butter and almond butter with sweetener till light and fluffy. Add egg and vanilla. Add the next 6 ingredients and stir well to combine. Stir in the chips, coconut and pecans. Scoop cookies out onto a lined sheet pan and flatten slightly.
Bake for 7-8 minutes or until golden around the edges. Allow the cookies to cool on the sheet pan at least 10 minutes before removing. Store in an airtight container..
